No-Brainer, Hearty, Kick-Your-Ass, world’s best Chili

Chili is one of those foods I crave on a cold snowy day. Unfortunately, on those days,  I refuse to drag my butt out to the car for a grocery store run. So… this kick ass chili recipe was inspired by laziness. I was nothing short of impressed by how amazing this chili turned out. It was thick and soooo good. I would even go so far as to say it is the world’s best chili! (Oh yeah, I claim that). I used only the ingredients I already had in my kitchen. One of those ingredients is Ghost Chili Pepper Powder. For those of us who like spicy… Ghost Chili Pepper Powder really does the trick.

If you are looking for a kick-your-butt chili recipe, I would guess you already know what a Ghost Pepper is. For those of you who have not had your behind kicked by a Ghost Pepper, let me tell you, it is hot! It is 400 times hotter than Tabasco Sauce. If you do not want your butt kicked, you can eliminate Ghost Pepper Powder and add additional 1/4 tsp of Cayenne Pepper. Whichever you decide to do, please use caution with these powders around your eyes, nose, mouth and other orifices. I promise, it will burn.

I would love to hear what you think of this recipe, it is not a traditional chili, so be prepared for something different. The potatoes make it similar to a stew, but I think they make the chili AWESOME!

I like to grind the dried basil and parsley between my fingers to release the flavors. I combine the seasonings ahead of time to help them to meld together and ensures they are evenly distributed throughout the chili.

Ingredients

Instructions
  1. Heat bacon grease in a hot skillet
  2. Sautee onion in bacon fat until onion is translucent

  3. Add ground beef to the onions and brown until beef is cooked through

  4. Add remaining ingredients and simmer for an hour or so until potatoes are cooked through you like a thinner chili, you may want to add additional water as the chili cooks and thickens. I happen to love a thick hearty chili, so I did not add additional water to my chili

  5. Serve immediately or wait a day. My 2¢, just wait, this gives the chili flavors time to come together, this makes the chili that much more impressive!
