Instructions
  1. Start by cutting the meat into one inch cubes. Generously season the meat with salt and pepper
  2. Heat 2 tbsp of avocado oil in a frying pan on medium heat. When hot, add beef and brown on all sides. Remove beef and set aside.
  3. In a sauce pan, add additional 2 tbsp of oil. Add onions and garlic. Sautee onion and garlic until translucent- approx 5 minutes.
  4. Add in all seasoning, chili powder, Spanish paprika, cumin, black pepper, chipotle chili powder and cayenne pepper. Mix into the onions and garlic until you can smell the spices. (approx 3 minutes) You will have to stir a bit to make sure spices don't stick to the bottom
  5. Add in diced tomatoes, green chilis, bone broth, and beef. Cover and cook on medium low for 35-40 minutes. Stir occasionally
  6. This step is optional- Mix arrowroot flour with 1/2 cup of broth from the chili. I like to mix in a mason jar with a lid. Shake until it is mixed. Stir back into chili and bring to a simmer for 5 minutes- be sure to stir occasionally.
  7. Serve topped with cilantro, green onion and sour cream or plain yogurt. Salt with celtic sea salt before eating.
