Instructions
  1. Beat egg yolk in a large bowl for 1 minute on low speed using a hand mixer- or using a cuisinart
  2. Add mustard, vinegar (or lemon juice) and salt and continue mixing for approx 30 seconds
  3. Slowly pour (drizzle) avocado oil into the egg mixture while mixing on high. Do not stop mixing until the mixture has thickened. THIS IS VERY IMPORTANT
  4. Taste and add additional seasoning (salt pepper and vinegar/lemon) if desired. Enjoy!
  5. Must be stored in refrigerator, will keep up to 3 weeks.
